THE PROJECT
Southern Thailand's Crab Khao Yam is deconstructed and served in distinct portions: wild herbs, roasted coconut, toasted chili, fermented fish dressing, and crab. Diners mix their own plate, exercising autonomy over flavour, texture, and aroma.
THE DISH
Khao Kyam Poo: butterfly pea rice tossed with crab, crispy pork cracklings, fried chilli-garlic, mango, red onion, lime, and signature hot sauce.
PEOPLE
Bunjerd.Boy is a Bangkok-based graphic designer and visual artist. DUNNO CLUB is a Thai graphic designer and digital artist known for bold collages and visual parodies.
Valla Table in Hell's Kitchen was founded by Chef Chuck Valla, serving Thai comfort food rooted in family recipes from Northern Thailand.
